? about Dolomite and adding a larger sproket in the rear

I do alot of road and hybrid biking now and am thinking of buying a Dolomite to ride on the trail ( lat) here in the snow,,,my one question is given the weight of these would an 8 speed freewheel be better ? If so what is involved in changing it ?

Does anyone here ride in the snow on the 7 speed ??

If you're worried about weight: bigger is always better.  I live in FL, so I don't know too much about the white stuff, but I do ride a lot on the beach.  The beach here has really loose sand in places, so if I know thats where I'm going to ride I slap the bigger rear sprocket on.  I think they make a quick change cassette for quick swaps.
